Ambra di Moscato
Amber is a natural element that has fascinated mankind since ancient times and has always held an important place in historical traditions. Sometimes scientific, sometimes mystical-religious, as well as aesthetic-ornamental. Amber expresses a color tone that blends beautifully with this Grappa. But amber is also synonymous with a delicate and highly sought-after fragrance that only epicureans deserve. Just like the fragrances released by the grapes and then by the Muscat pomace before, during, and after distillation.
Organoleptic Profile
Color
Deep golden yellow (amber).
Nose
A floral and spicy bouquet, characteristic of young grappa, in perfect harmony with the wood’s delicate vanilla notes.
Palate
Initial citrus and spicy notes gradually give way to a crescendo of vanilla and tea leaves. The flavour is intense and enveloping, with extraordinary persistence.
Technical specifications
Downward movement of the pomace in a continuous still with three distillation stages, with a countercurrent flow of water vapour, producing phlegm at 35–40% ABV. This is followed by the fractional distillation of the phlegm in a copper column with 23 plates.
At least eighteen months in large Slavonian oak vats.
From the lands where the vine has reached one of its highest expressions comes the Nebbiolo pomace, whose virtuous and powerful spirit finds an extraordinary and moving balance after a long maturation in wood.
After a long aging process, its bold character merges with the softness of the wood, giving life to a harmonious, complex, and profound spirit.
