Technical Characteristics
Downward movement of the pomace in a continuous still with three distillation stages, with a countercurrent flow of water vapour, producing phlegm at 35–40% ABV. This is followed by the fractional distillation of the phlegm in a copper column with 23 plates.

From the pomace of one of the finest expressions of Italian winemaking comes an austere, powerful spirit of remarkable elegance.
It is a rather rare white grape variety, found almost exclusively in Upper Piedmont. It produces pomace with pleasant floral notes, easily distinguishable even in the wine.
