Ottantotto barriques
This is the result of Distillerie Francoli’s historical heritage in terms of the woods used for aging, but also for having kept the best fruits of its garden separate and at rest, with patience and sacrifice. Eighty-eight barriques were purchased in a single transaction in 1988. Since then, those woods have continued to perform their function, proving that their activity does not end after a few years of use.
Organoleptic Profile
Color
Amber, with very intense golden highlights.
Nose
Jam and candied fruit, with a pleasant hint of raisins; refined and noble.
Palate
The vigorous alcoholic entry does not conceal a subtle sweetness resulting from long ageing. Vanilla notes from the wood emerge immediately, accompanied by hints of tea leaves and candied fruit. Black pepper appears on the finish. Remarkable persistence.
Technical specifications
Downward movement of the pomace in a continuous still with three distillation stages, with a countercurrent flow of water vapour, producing phlegm at 35–40% ABV. This is followed by the fractional distillation of the phlegm in a copper column with 23 plates.
